I Can Eat A Rainbow - thank you for your support so far!
I Can Eat A Rainbow has seen islanders getting involved with eating and trying new veg & fruit and colouring in the resource to keep track of their progress of eating rainbow-full meals. So far we've seen children and families include veg & fruit in meals such as:
Tomatoes with baked beans on toast
Platter of pineapple, mango, tomato and avocado
Roasted veg such as courgettes, peppers & sweet potatoes which were added to fajitas
BBQ sweetcorn and asparagus
Cucumber, avocado, spinach and cheese sandwiches with a side of tomatoes and mandarins
Beans, peas and red pepper paella
Chicken rice pot with lots of veg, including green beans, tomatoes and sweetcorn
Shepherds pie with root mash (swede, carrot and parsnip); followed by a fresh fruit salad

Spreading the "I Can Eat A Rainbow" message
We've also had a great response from the media and the States of Guernsey sharing our message.
Bowel Cancer Guernsey and Male Uprising Guernsey included us in their Guernsey Press spread.
The States of Guernsey included our piece on their website and on their leaflet, which was posted to all houses across the Bailiwick.
We also made the ITV channel news. ITV channel reporter Marina Jenkins' lovely written piece can be found here with a great video of a family using the resource and trying new veg & fruit! Our own, Ellie Gould makes an appearance explaining it's use.
Finally, 200 prints were also sent out in the food parcels that the Guernsey Welfare Service and Shiloh Church are providing households. We carry on supporting the Welfare Service by providing them with fresh veg & fruit each week. Hopefully the resource can support children to eating a rainbow of foods included in the parcels.
